Step 1: For the marinade: Mix half the Greek yogurt, 3 crushed garlic cloves, 4 tbsp olive oil, 3 tbsp lemon juice, and all the spices in a large bowl.
Step 2: Cut the chicken thighs into chunks, coat thoroughly in the marinade, cover, and chill for at least 1 hour.
Step 3: Preheat the oven to 200°C (180°C fan).
Step 4: Thread the marinated chicken pieces onto skewers and place them on a baking tray lined with foil.
Step 5: Roast the chicken skewers in the oven for 25-30 minutes, turning halfway, until cooked through and slightly charred.
Step 6: Cook the frozen chips according to the packet instructions.
Step 7: To make the tzatziki: Grate the cucumber and squeeze out the excess water. Mix with the remaining Greek yogurt, 3 crushed garlic cloves, 3 tbsp lemon juice, chopped mint, and a pinch of salt.
Step 8: Finely slice the red onion and tomatoes.
Step 9: Warm the pita breads in the oven or a toaster.
Step 10: To assemble: Spread tzatziki on a warm pita, add pieces of roasted chicken, chips, sliced red onion, and tomato. Squeeze over some fresh lemon juice before wrapping.
