Step 1: Heat oil in a deep frying pan. Add the minced lamb and brown thoroughly over medium-high heat, draining any excessive fat.
Step 2: Add the diced white onion, carrot, and minced garlic cloves. Cook for 5 minutes until soft.
Step 3: Sprinkle over the plain flour and stir in the tomato purée, cooking for 1-2 minutes.
Step 4: Add the beef stock, frozen peas, rosemary sprigs, and Worcestershire sauce. Simmer gently on low heat for 20 minutes until thickened.
Step 5: Peel and chop the potatoes, then boil for 15 minutes. Mash with butter and cheese until ultra-creamy.
Step 6: Spoon the lamb into a baking pan, top with mashed potato, and bake at 200°C for 25 minutes until the top is deeply crusted and golden.
