Step 3: Gently heat the caster sugar with water in another saucepan to create a light sugar syrup.
Step 4: Whisk the sugar syrup into the thickened milk. Let cool slightly, then stir in the egg yolks.
Step 5: Pour the custard mixture into the pastry shells, dust lightly with cinnamon, and bake at 240°C for 12-15 minutes until the pastry is crisp and the custard is blistered and caramelized on top.
