Step 1: Preheat the oven to 200°C (180°C fan).
Step 2: Sift the flour and a pinch of salt into a large mixing bowl.
Step 3: Make a well in the centre of the flour and crack in the eggs.
Step 4: Whisk the eggs, gradually drawing in the flour from the sides.
Step 5: Slowly pour in the milk, whisking continuously to form a smooth batter.
Step 6: Stir in the fennel seeds and ground black pepper.
Step 7: Cover the bowl and leave the batter to rest for at least 30 minutes (or up to 3 hours).
Step 8: Place the sausages in a roasting tin, drizzle with a little oil, and bake for 15 minutes until browned.
Step 9: Remove the tin from the oven and carefully pour the resting batter over the hot sausages.
Step 10: Return to the oven and bake for 25-30 minutes until the batter is risen, crisp, and golden brown.
