Step 1: Heat the olive oil in a large pan over medium heat. Add the minced beef and fry for 5-8 minutes until thoroughly browned, breaking up any lumps.
Step 2: Add the chopped onion, carrot, and celery. Cook for 5 minutes until softened.
Step 3: Stir in the tomato purée and plain flour, cooking for 1 minute to coat the meat.
Step 4: Pour in the beef stock and Worcestershire sauce, and toss in the thyme. Simmer on low heat for 30 minutes until the gravy is thick and rich.
Step 5: Boil the potatoes in a large pan of water for 15-20 minutes until soft. Drain and mash with butter and milk until smooth, seasoning with black pepper.
Step 6: Transfer the beef mixture into an ovenproof baking dish. Spread the mashed potato evenly on top, roughing the surface with a fork, and bake at 200°C for 25-30 minutes until bubbling and golden.
